Todi DOC
The TODI DOC area covers the whole territory of the towns of Todi, Massa Martana, Collazzone and Montecastello di Vibio and it was created to give the right value to one of the most suitable area for wine production within the pre-existing Colli Martani DOC zone, where Todi is the main centre.
The appreciation of this centuries-old tradition, now honoured with this award, increased in the last years thanks to the plantation in the TODI DOC zone of many acres of Grechetto grape, as well as Sangiovese and Merlot.
We are in front of well-structured wines, with medium/high alcohol content, good acidity and persistent and characteristic aromas.
The TODI DOC is reserved for wines from the following five categories:
White
Grechetto grape: minimum 50%; other white grapes from Umbria: up to 50%.
Colour: straw-yellow.
Scent: vinous, delicate and fruity.
Taste: from dry to sweetish, fresh, harmonious and sometimes lively.
Alcohol: minimum 11.5%.
Red, also “Superiore”
Sangiovese grape: minimum 50%; other red grapes from Umbria: up to 50%.
Colour: ruby red, lively, relatively intense.
Scent: vinous, pleasantly fruity.
Taste: dry, full-bodied, slightly tannic.
Alcohol: minimum 12%, “Superiore”: 12.5%.
Grechetto, also “Superiore” and “Passito”
Grechetto grape: minimum 85%; other white grapes from Umbria, with the exception of those aromatics: up to 15%.
Colour: straw-yellow with golden highlights. Amber yellow for “Passito”.
Scent: Slightly vinous, delicate. Intense and characteristic for “Passito”.
Taste: from dry to sweetish, full, slightly bitter aftertaste, fruity. For “Passito”, from love to sweet and pleasant.
Alcohol: minimum 12%; “Superiore”: 12.5%. “Passito”: 16%, acquired alcohol: at least 12%;
Sangiovese, also “Superiore”
Sangiovese grape: minimum 85%; other red grapes from Umbria: up to 15%.
Colour: ruby red with violet highlights when young, tending to garnet with aging.
Scent: winey, fruity.
Taste: dry, harmonic, characteristic.
Alcohol: minimum 12%; “Superiore”: 12.5%.
Merlot, also “Superiore”
Merlot: 85% minimum, other red grapes from Umbria: up to 15%.
Colour: ruby red with violet highlights when young, tending to garnet with aging.
Scent: vinous, pleasing and distinctive.
Taste: dry, full-bodied.
Alcohol: minimum 12%; “Superiore”: 12.5%.
