DOC Torgiano
The production area is the entire territory of the town of Torgiano, in the province of Perugia. Located in the South-East of Perugia, is characterized by not very high hills, between 180 and 300 m a.s.l. The soils consist of sandy clay and limestone.
Of fundamental importance are the human factors related to the area of production. Fragments of mosaics, remains of niches, building structures, furnaces, tanks and amphoraes testify to the presence of settlements and Villae rusticae and attest to the local habit of viticulture in Roman times. After long centuries of various historical events, to the emerging new world viticulture, Torgiano has aligned itself with the most famous Italian wine areas receiving first in Umbria, in 1968, the recognition of the Denomination of Controlled Origin which was followed by the DOCG in 1990.
Bianco
From Trebbiano (50 to 70%) grapes; other white vines can contribute up to a maximum of 50%.
Colour: more or less intense straw yellow.
Bouquet: vinous, floral and pleasant.
Taste: dry, slightly fruity and pleasantly tart.
Use with: meatless appetizers, spelt soup, 'tagliolini' with prawns, baked fish, soft cheeses.
Rosso
From 50% to 100% Sangiovese; other red vines can contribute up to a maximum of 50%. It must be aged a minimum of 13 months, of which at least 6 in the bottle.
Colour: ruby red.
Bouquet: vinous and delicate.
Taste: dry, harmonious and full-bodied on the palate.
Use with: mixed grill, Perugian roast pork, rabbit 'alla cacciatora', sharp cheeses.
Rosato
From Sangiovese (50% to 100%) grapes; other red vines can contribute up to a maximum of 50%.
Colour: soft salmon pink.
Bouquet: fruity.
Taste: dry, fresh and lively.
Use with: hot appetizers, omelettes with cheese and vegetables, sausages and legume soups.
Chardonnay
At least 85% Chardonnay grapes; other white vines can contribute up to a maximum of 15%.
Colour: more or less intense straw yellow.
Bouquet: characteristic, intense and pleasant.
Taste: dry, fruity and slightly tart.
Use with: aperitif, cold appetizers, poached fish, 'passatelli' in broth, spaghetti 'alla Norcina, fish soups.
Pinot Grigio
At least 85% pinot grigio; other white vines can contribute up to a maximum of 15%.
Colour: more or less intense straw yellow.
Bouquet: refined and fruity.
Taste: dry, fragrant, fresh.
Use with: grated vegetables, poached fish, grilled poultry, creamy cheeses, fish broth.
Riesling Italico
At least 85% Riesling italico grapes; other white vines can contribute up to a maximum of 15%.
Colour: more or less intense straw yellow.
Bouquet: delicately floral.
Taste: pleasantly tart and fruity on the palate.
Use with: meatless appetizers, poached fish or baked in foil, spaghetti with clams and fresh cheeses.
Cabernet Sauvignon
At least 85% Cabernet Sauvignon grapes; other red vines can contribute up to a maximum of 15%. It must be aged a minimum of 13 months, of which at least 6 in the bottle.
Colour: garnet red.
Bouquet: persistent, typical of the vine.
Taste: with a characteristic aftertaste.
Use with: roast meats, risotto with meat ragout and aged cheeses.
Merlot
Merlot for at least 85%. Other red grapes up to a maximum of 15%.
Colour: ruby red with violet hues.
Bouquet: vinous typical of the vine.
Tas te: soft, aromatic.
U se with: game, white meats, semi-hard cheeses, cured meats.
Pinot Nero
At least 85% Pinot nero grapes ; other red vines recommended or authorised in the province can contribute up to a maximum of 15%. It must be aged a minimum of 13 months, of which at least 6 in the bottle.
Colo ur: garnet red tending towards purple.
Bou quet: full and lingering, typical of the vine.
Tast e: dry and full-bodied.
Us e w ith: grilled poultry, roast pigeon, stewed rabbit.
Spumante
Chardonnay (40 to 50%) and Pinot nero (40 to 50%) grapes ; other white vines recommended can contribute up to a maximum of 15%. It must be processed using the traditional method and with a secondary fermentation period of at least 24 months.
Perl age: fine and persistent .
Colo ur: more or less intense straw yellow.
Bou quet: light and pleasantly fruity.
Tast e: dry, elegant and harmonious, with nuances of apple and whitethorn.
Us e w i t h: aperitifs, p o a c h e d fish delicate starters.
Late Harvest
Chardonnay 50% minimum . Other non-aromatic white grapes up to a maximum of 50%.
Colour: straw yellow to amber.
Bouquet: delicate, intense, sometimes aromatic.
Taste: harmonious, velvety and sweet.
Vin Santo
Trebbiano Toscano from 50% to 70 %. Other non-aromatic white grapes up to a maximum of 50%.
Colour: golden yellow, sometimes deep amber.
Bouquet: intense, ethereal characteristic.
Taste: soft, harmonious.
