Description DOC & DOCG wines of the Canticle Wine Route
The territory of the Canticle Wine Route offers the possibility of choosing from among a diversified range of quality wines: there is a wine classified as DOCG (Denominazione d' Origine Controllata e Garantita), recognition of the particular excellence attributed to some DOC wines of national and international renown and 5 wines classified as DOC (Denominazione d'Origine Controllata), which indicates quality wines, originating from limited areas (usually of small to medium dimensions), whose oeno-chemical (dry extract, total acidity, etc.) and organolectic (colour, odour, taste) characteristics must respect the parameters dictated by the so-called "Production rules".
Torgiano Rosso Riserva Docg
The production area includes the entire territory of the Town of Torgiano, with the exclusion of the alluvial land along the course of the Tiber and Chiascio rivers, as well as the lands at the bottom of the valley and along the hollows that descend on the Northern side of the hill of Brufa. This territory, the first to be awarded the DOC in Umbria in 1968, was also the first to obtain a DOCG in 1990.
Types: Sangiovese grapes from 50 to 70%, Canaiolo from 15 to 30%, Trebbiano up to 10%; other red grapes can contribute (Ciliegiolo, Montepulciano ) up to a maximum of 15%.
It must be aged a minimum of three years, beginning from the 1st of November of the year of the grape harvest.
Colour: brilliant ruby red
Bouquet: delicate, vinous bouquets, which become complex with age.
Taste: dry, harmonious, of the right body and persistent.
Combine with: roast meats, poultry, game and aged hard cheeses.
Assisi DOC
From vineyards located in grounds with favourable exposure and entering in the range of hills between 180 and 350 meters above sea level, in part in the townships of Assisi and Spello, in the province of Perugia, and of the county seat itself, the following types of wine are obtained:
BIANCO (WHITE) - made with Trebbiano (50 - 70%) and Grechetto (10 - 30%) grapes, to which the fruit of other local white-grape vines can be added (maximum 40%).
Colour: pale yellow with greenish reflections
Bouquet: pleasing, fresh, characteristic bouquet
Taste: dry, fresh, slightly fruity taste
Minimum alcohol content: 10,5%.
Use: aperitif or table-wine
GRECHETTO - made with grapes from the vine of the same name (minimum 85%) and possibly with the addition of other local white grapes
Colour: soft, pale yellow
Bouquet: pleasant, fresh, characteristic bouquet;
Taste: dry, fresh, slightly bitter, fruity, harmonious.
Minimum alcohol content: 11,5%
Use: with fish
ROSSO (RED) - made with Sangiovese (50 - 70%) and Merlot (10 - 30%) grapes, to which other local red grapes may be added (maximum 40%);
Colour: ruby red
Bouquet: vinous, characteristic, perfumed
Taste: dry, full-bodied, harmonious, intense and persistent.
Minimum alcohol content: 12%.
Use: table wine.
ROSÉ - made with the same grapes as our Red wine
Colour: more or less intense rosy colour
Bouquet: vinous, delicate
Taste: dry, fresh, harmonious.
Minimum alcohol content: 11%.
Use: table wine.
NOVELLO - made with the same grapes as our Red wine
Colour: ruby red, with purple reflections
Bouquet: fruity, persistent
Taste: harmonious, fresh, even lively.
Minimum alcohol content: 11%.
Use: table wine.
Colli Perugini DOC
As in many other zones here as well evidence exists of the wine-producing activity of the Etruscans and the Romans. The area includes in part the territories of the townships of Perugia, Deruta, Masciano, Fratta Todina, Monte Castello di Vibio & Piegaro, in the province of Perugia, and San Venanzo in the province of Terni. This area, which extends South of Perugia to the right of the Tiber river, has a climate and an exposition that are particularly favourable for viticulture. It is interesting to note how, in the Colli Perugini, some ancient varieties of autochthonus vines are still present, such as Mostiola, Tintarolo, Pecorina and Lupeccio. The soil of this area is, generally, clayey with a strong calcareous component, which can be verified in the light colour of the land.
White wines: Trebbiano (65 to 85%); Verdicchio, Grechetto, Garganega & Malvasia, alone or jointly, (15 to 35%), with Malvasia amounting to no more than 10% of the total.
Colour: pale yellow with greenish reflections and fruity, pleasant and characteristic bouquet.
Taste: dry and fresh, delicately fruity.
Use with: rice soup with chicken livers, omelette with sausages and fresh cheeses.
Red and Rosé: Sangiovese (65 to 85%); Montepulciano, Ciliegiolo, Barbera & Merlot, alone or jointly, (15 to 35%), with Merlot amounting to no more than 10% of the total..
Red
Colour: more or less intense ruby red
Bouquet: vinous, delicate, characteristic
Taste: dry and fruity, full-bodied.
Use with: starters with meat sauces, roast poultry, pork and beans.
Rosè
Colour: more or less intense rosy colour
Bouquet: delicately vinous
Taste: dry, harmonium, and fresh.
Use with: salt-water crustaceans, rustic pies, fettuccine alla romana and semi-ripened cheeses.
Colli Martani DOC
The land on the left bank of the Tiber river is rich in evidence of the wine-producing activity conducted in the area, first by the Etruscans and then the Romans. The local wine is noted especially for its particular suitableness for long aging.
Renowned for the production of wine from the time of Ancient Rome (Martial and Plinius the Elder speak of it) this area, which includes a vast area to the North East and South West of the ridge of the Colli Martani, is improving rapidly in quality with single-vine wine production.
Tipologie Trebbiano
At least 85% Trebbiano, Trebbiano Spoletino, Grechetto, Malvasia bianca di Candia, Malvasia, Garganega and Verdicchio, alone or jointly, up to a maximum of 15%.
Colour: pale yellow with green reflections
Bouquet: characteristic slightly vinous bouquet
Taste: dry, tart, slightly fruity, characteristic and refined.
Use with: pasta dishes with fish sauces, chicken salad, deep-fried vegetables.
Grechetto
At least 85% Grechetto; Trebbiano, Spoletino, Malvasia & Malvasia di Candia, Garganega & Verdicchio, alone or jointly, up to a maximum of 15%. This wine may be labelled with the geographical sub-denomination 'of Todi', whenever obtained exclusively from grapes produced in the township of Todi.
Colour: pale yellow
Bouquet: slightly vinous, delicate and characteristic.
Taste: dry (or semi-sweet), velvety, slightly bitter aftertaste, fruity, characteristic, harmonious.
Use with: hot appetizers and spicy regional pasta dishes such as rigatoni alla norcina.
Sangiovese e Sangiovese Riserva
At least 85% Sangiovese; Canaiolo, Ciliegiolo, Barbera, Merlot, Montepulciano, Trebbiano, Trebbiano Spoletino, Grechetto, Malvasia & Malvasia di Candia, Garganega & Verdicchio, alone or jointly, up to a maximum of 15%. The white grapes must not exceed 10% of the overall total of complementary vines. This wine cannot be consumed before undergoing mandatory aging for at least a year. If it is 12 proof and is aged for two years, of which at least one in oak casks, it can be labelled "Reserve".
Colour: ruby red if young, with hints of orange and garnet if aged
Bouquet: characteristic vinous bouquets which become ethereal with age.
Taste: dry, harmoneus, slightly tannic and pleasantly bitter. It has characteristic nuances of red fruits and is delicately herbaceous.
Use with: baked pasta, polenta with pork ribs, Umbrian roast pig, aged cheese
Torgiano DOC
The production area is that of the entire territory of the township of Torgiano, in the province of Perugia. Situated to the south-east of Perugia, it is characterised by rather low hills, between 180 and 300 meters above sea level. The soil is composed of sandy and calcareous clay on a tufaceous base. This denomination, which counted on a White and a Red wine, has been considerably enlarged and today includes a solid series of "varietal" wines, made almost exclusively from individual vine types, and a sparkling wine.
Bianco di Torgiano: from Trebbiano (50 to 70%), Grechetto (15 to 40%) grapes; other white vines recommended or authorised in the province can contribute up to a maximum of 15%.
Colour: more or less intense straw yellow
Bouquet: vinous, floral and pleasant bouquet
Taste: dry, slightly fruity and pleasantly tart.
Use with: meatless appetizers, spelt soup, tagliolini agli scampi and baked fish.
Rosso di Torgiano: from 50% Sangiovese, Canaiolo (15 to 30%), Trebbiano (up to 10%) grapes; other red vines recommended or authorised in the province can contribute up to a maximum of 15%. It must be aged a minimum of 13 months, of which at least 6 in the bottle.
Colour: ruby red
Bouquet: vinous and delicate bouquet
Taste: dry, harmonious and full-bodied on the palate
Use with: mixed grill, Perugian roast pork, rabbit alla cacciatora and sharp cheeses.
Rosato di Torgiano: from Sangiovese (50%), Canaiolo (15 to 30%), and Trebbiano (up to 10%) grapes; other red vines recommended or authorised in the province can contribute up to a maximum of 15%.
Colour: soft salmon pink
Bouquet: fruity
Taste: dry, fresh and lively.
Use with: hot appetizers, omelettes with cheese and vegetables, sausages and legume soups.
Chardonnay di Torgiano: at least 85% Chardonnay grapes; other white vines recommended or authorised in the province can contribute up to a maximum of 15%.
Colour: more or less intense straw yellow
Bouquet: characteristic , intense and pleasant bouquet
Taste: dry, fruity and slightly tart
Use: an excellent aperitif, use with cold appetizers, poached fish and passatelli in broth.
Pinot Grigio di Torgiano: At least 85% pinot grigio; other white vines recommended or authorised in the province can contribute up to a maximum of 15%.
Colour: more or less intense straw yellow
Bouquet: refined and fruity
Taste: dry, fragrant, fresh.
Use with: vegetables "au gratin", poached fish, grilled poultry, creamy cheeses.
Riesling Italico di Torgiano: At least 85% Riesling italico grapes; other white vines recommended or authorised in the province can contribute up to a maximum of 15%.
Colour: more or less intense straw yellow
Bouquet: delicately floral bouquet
Taste: pleasantly tart and fruity on the palate.
Use with: meatless appetizers, poached fish or baked in foil, spaghetti with clams and fresh cheeses.
Cabernet Sauvignon di Torgiano: At least 85% Cabernet Sauvignon grapes; other red vines recommended or authorised in the province can contribute up to a maximum of 15%. It must be aged a minimum of 13 months, of which at least 6 in the bottle.
Colour: garnet red
Bouquet: persistent perfume typical of the vine and dry taste with a characteristic aftertaste. Ideal with roast meats, risotto with meat ragout and aged cheeses.
Pinot Nero di Torgiano: At least 85% Pinot nero; other red vines recommended or authorised in the province can contribute up to a maximum of 15%. It must be aged a minimum of 13 months, of which at least 6 in the bottle.
Colour: garnet red tending towards purple
Bouquet: full and lingering, typical of the vine
Taste: dry and full-bodied.
Use with: grilled poultry, roast pigeon and stewed rabbit.
Torgiano Spumante: Chardonnay (40 to 50%) and Pinot nero (40 to 50%); other white vines recommended or authorised in the province can contribute up to a maximum of 15%. It must be processed using the traditional method and with a secondary fermentation period of at least 24 months.
Perlage: fine and persistent
Colour: more or less intense straw yellow
Bouquet: light and pleasantly fruity bouquet.
Taste: dry, elegant and harmonious, with nuances of apple and whitethorn.
Use: aperitifs, and with poached fish and delicate starters.
Todi DOC
The TODI DOC area covers the whole territory of the towns of Todi, Massa Martana, Collazzone and Montecastello di Vibio and it was created to give the right value to one of the most suitable area for wine production within the pre-existing Colli Martani DOC zone, where Todi is the main centre.
The appreciation of this centuries-old tradition, now honoured with this award, increased in the last years thanks to the plantation in the TODI DOC zone of many acres of Grechetto grape, as well as Sangiovese and Merlot.
We are in front of well-structured wines, with medium/high alcohol content, good acidity and persistent and characteristic aromas.
The TODI DOC is reserved for wines from the following five categories:
White
Grechetto grape: minimum 50%; other white grapes from Umbria: up to 50%.
Colour: straw-yellow.
Scent: vinous, delicate and fruity.
Taste: from dry to sweetish, fresh, harmonious and sometimes lively.
Alcohol: minimum 11.5%.
Red, also “Superiore”
Sangiovese grape: minimum 50%; other red grapes from Umbria: up to 50%.
Colour: ruby red, lively, relatively intense.
Scent: vinous, pleasantly fruity.
Taste: dry, full-bodied, slightly tannic.
Alcohol: minimum 12%, “Superiore”: 12.5%.
Grechetto, also “Superiore” and “Passito”
Grechetto grape: minimum 85%; other white grapes from Umbria, with the exception of those aromatics: up to 15%.
Colour: straw-yellow with golden highlights. Amber yellow for “Passito”.
Scent: Slightly vinous, delicate. Intense and characteristic for “Passito”.
Taste: from dry to sweetish, full, slightly bitter aftertaste, fruity. For “Passito”, from love to sweet and pleasant.
Alcohol: minimum 12%; “Superiore”: 12.5%. “Passito”: 16%, acquired alcohol: at least 12%;
Sangiovese, also “Superiore”
Sangiovese grape: minimum 85%; other red grapes from Umbria: up to 15%.
Colour: ruby red with violet highlights when young, tending to garnet with aging.
Scent: winey, fruity.
Taste: dry, harmonic, characteristic.
Alcohol: minimum 12%; “Superiore”: 12.5%.
Merlot, also “Superiore”
Merlot: 85% minimum, other red grapes from Umbria: up to 15%.
Colour: ruby red with violet highlights when young, tending to garnet with aging.
Scent: vinous, pleasing and distinctive.
Taste: dry, full-bodied.
Alcohol: minimum 12%; “Superiore”: 12.5%.
